If there are no multiple 'single' things to be put together to form 'two' of that thing, then can 1+1 possibly equal 2 when there is no 'one' to begin with? The fact 1+1=2 needs the universe to exist, as the universe started the things we assign as a 'quantity' and numbers are a human quantitative invention

It would be a matter of perception. One can say 1+1=2 is always true, no matter the circumstances or take Eko's way of thinking.
I would say, however, that it is a human concept, made up by us to make life logical, in a sense. Without humanity or planet where one would use the same concept of math, the formula itself would not exist, thus not making it true.
