2, one to be the penultimate bad guy who's the villain's right-hand man, and one to be the one who gets his teeth kicked in by the main character all the time, possibly for comic relief.

a third could be more middle-of-the-road, but not really necessary imo. Anything past that and they just turn into henchmen, not sidekicks.
