Nagare Higashion - Because he held the world map in his right hand, because he's trying to say something about directions by holding the map? *random theory*
Conclusion: "This area is full of crap" and "It's a nasty place!"
There are two pictures. One of the sunrise, which is east. One of the victim facing the sunset, which is west. If the victim was facing west and was stabbed in the back, then the culprit had to come from the east, meaning the east person did it. Of course, I have no idea how the World Cup ticket or the map play into things.
Spoiler: Theory 2
There's no clue for north (as far as I can see). Since the clues for east, south and west are all here, and none of them are bloodied, one might guess that there was a clue for north that was bloodied and was since removed from the scene. Thus, the north person needs to be questioned.
Spoiler: Theory 3
The only thing bloodied at the scene of the crime is the map of the world. The only other clue that relates to the word 'world' is the World Cup ticket. Thus, it was the World Cup clue that was important, meaning the south person needs to be questioned.
I think all three are plausible, but pretty unlikely. And there's really no way to tell which one is right.

But with the wrong reasoning ^^
Spoiler:
So the answer - the Minami "South" one is correct? Then... the world map was bloodstained to point to the FIFA World Cup ticket - the South item. In other words - c-square's third theory.
Doesn't matter where it was stained.
All that mattered is that only and only Minami can be suspected because of that two items.
You can't get another conclusion out of this
Damn, that makes the longest-to-figure-out riddle in this topic, doesn't it?
Kogorou, let us know two things:
1. Does it matter how old the assistans were?
2. Does it matter that the professor's name was Windshield? (something about the wind this time?)

Actually... Eworm already guess the right person....so this riddle is actually very short... but because your deductions is only because you didnt see the Item that re-present the north. i think that is not valid. but it look like i made a mistake and made you assumption that Sasaki is not the culprit... sorry if i confuse you and others.....
the culprit is Sasaki Kitaoji.
the 4 item really have connections to wind directions and the professor name also serve as the hint.
the only item that bloodstained is the north item. so it indicates the culprit that have KITA in his / her name
Spoiler: eworm deduction

Okay... I'll leave aside how absurd it was for the victim to have such items in his pockets, especially the one year-old ticket...
Deductions:
So my guess is that the bloodstained map the victim was holding onto was his way of indicating the dying message is about the directions - NWES. The three items in his pocket - sunrise booklet, sunset photo and the ticket - were pointing to the East, West and South respectively, so there's a lack of a North-item. Maybe it was taken by the culprit which would mean it was Sasaki Kitaoji - the assistant with the North in his name - who killed the professor. Even though I'm still suspicious of the janitor.

Yeah that is a nice one. Told you xpon
It could be right...
Spoiler:
Fumiko Nishino
Well the only Picture were the victim is looking at something is the Sunset and the Sun sets in west.
Nishino means "towards west" and the victim looking towards west indicates that Nishino is the culprit.
