Though I do agree with Chekhov's theory regarding the identity of Akai and Bourbon, I am curious about what Okiya says near the end. He says that Scar Akai "wasn't who I thought he was". That doesn't quite seem to accord with your theory, as far as I can see, though it doesn't work so well the other way either.

or maybe he's waiting to attack the Organization in a way that doesn't end with Kir being murdered by them.

also, while I like Blind's theory, I don't think it's weird that Gin was in a good mood towards the end. He finds him annoying but if he is doing something that helps the Organization, Gin probably approves of it.

Although I have very little/no proof I have one theory that I've been leaning towards and it involves the answer to a completely unanswered question.

Who is Bourbon? Yes, I'm serious. We know that Okiya is a disguise either way and Akai is too if Akai is Bourbon but who is the person who is disguising as either Subaru-san or Amnesia Akai? While I do think it's extremely likely it's a new character, my guess is Koumei.

Usually Conan-kun feeling very tense when BO is mentioned, but this time did not feel tense as always when Gin is mentioned by Camel.

Gin saying something regarding Sherlock Holmes shown that he has some Mr Nice Guy's attitude.

Gin and Akai cannot compare the dreadfulness of Okiya Subaru's sinister smirk.

Okiya acting like a snake in the grass, so reach out of Okiya, Okiya is the snake (treacherous person), NEVER Trust The Snake

this is what i think about identities:

first point - someone left a warning message to Jodie. Jodie believes its Akai. i think Jodie would recognize his writing, proving Akai appeared in this case. so either Okiya or scar Akai is real Akai.

second point - Jodie was asking if someone with scar bought that hat scar Akai is wearing. the answer was NO. what does that mean? why did shopkeeper have not seen someone with scar? so how did scar Akai bought that hat? if he's not real Akai, then he could have bought it without his disguise, proving that scar Akai is not real Akai, which means real Akai is Okiya.

Gin spoke of Bourbon with distaste in episode 580 but had a sort of admiration when speaking about "Sherlock Holmes" in episode 581. It looked and sounded like this "Sherlock Holmes" has impressed Gin in the past and this new revelation is really nothing new to him, which is why he backed off immediately without displeasure.

Handwriting aside, the coffee shop employee told Jodie that a customer who 1) had a burn mark on his right cheek, and 2) was wearing that particular cap, had left the coffee shop right after she left her seat to take her call outside.  If it wasn't Scar Akai who left the message, 1) Scar Akai would have noticed who did leave the message, OR if Scar Akai left before the message was left, 2) The person who left the message would have noticed Scar Akai.  Given that Okiya's reaction shows that he had not seen Scar Akai until afterwards, and that Scar Akai does not seem to be tailing anyone in particular, it's highly probable that: 1) Scar Akai left the message before he left the coffee shop, and 2) Okiya was not the person that left the message, because he would have seen Scar Akai in the coffee shop otherwise.

Now, handwriting:  Can't tell for sure whether the message left was written by a left-handed person or a right-handed person.  Any ideas?

Indeed. You cannot tell which hand someone prefers while writing without trace evidence (outside of witnessing them doing the writing yourself).
