I think Scar Akai know where Chainti was because, Gin see him, so he in the position to see Gin. If he know BO and know how they work, he would spot Chianti.

as for Bourbon, he could be the boss him self investagating playing the good guy " Okiya "

Scar-Akai, he is a clone who runs wild. Sera is a female clone from Akai and then there is also a "Last Order"-Version of Akai, in loli-mode, comes in chapter 800.
