He stuck around Jodie long enough in the bank to get a feel for the situation with her so there's no problem with that. But he disappeared almost immediately after showing himself in front of Andre which, to me, is hardly enough time to interpret someone's reaction.
You have a point.
Coming from an entirely speculative standpoint, though, it could be that Bourbon did notice Camel's reaction, but not in the way the reader/viewer did. Maybe he expected a "Hey, bro, what the hell are you doing here, you're not supposed to be out and about" kinda reaction, but instead got a guy that stood still and hesitated, and thus judged it as Camel acting "like he saw a ghost".

Bourbon mentions that while he was the one in the disguise he came to the conclusion that Akai was really did. I'm sure Sera's words were even more confirmation but we don't know if he was told about it before confronting Sherry.
Continuing in the speculative standpoint, I don't see why Vermouth and Bourbon wouldn't be sharing information on their probing for confirmation of Akai's death, seeing as they both seem to be very interested in knowing that kinda thing (hence Vermouth's "that's what I wanted to hear" after tazing Sera). It also seemed to me that knocking Sera out was also part of their plan, so I wouldn't put off the idea that when Vermouth notified Bourbon about knocking Sera out, she also told him "and guess what, she thinks Akai is dead, too".
