I think it was always silver-white in the manga, they just couldn't pick a colour in the anime.

Or, he's the opposite of Vermouth: instead of looking way younger than she is, he looks way older than he is.  The animators just wanted to make that clear.

Volume 24 file 7, The Haido City Hotel Sherry case, had a color page. I think that's the first time Gosho had drawn Gin in color unless he has some personal refs or did something for a guidebook.

All of this means Gin's codename is a pun. "Gin" with a hard "G" like "gun" means "silver" in Japanese. The boss clearly has a sense of humor.
