Based on what I didn't see on your Completed Category List:

On Comedy/School Life:
(1) Gokusen - I saw GTO in your list, Yankumi is Onizuka's female counterpart
(2) Green Green - This is school-type comedy ecchi but I saw Futari Ecchi in your list so I guess you wouldn't mind (Btw, Green Green Erolutions OVA is actually hentai if you'll come across this one)
(3) Golden Boy - an old classic comedy ecchi which is associated with "Learning"

On Action/Adventure:

I think you have covered much of the Fighting Anime genre. What I didn't see on the list are outerspace actions (Not sure though if you just missed to include them or I just missed them on your list):
(1) Cowboy Bebop
(2) Trigun
(3) Outlaw Star

I started Gintama already and it's alright. Might watch ah my goddess afterwards. And will stay away from fate/stay and chobits.

Anything similar to Kimi Ga Nozomu Eien (Romance - mature / Ecchi / Drama / Psychological), preferably another Seinen series.

It was just a random pick, as for some reason I was searching for an ecchi series yesterday which was not a Fighting ecchi series. I watched a couple of episodes and I feel I'm in the mood to watch something similar. Not really my genre so I have no idea what to watch next belonging in this category.
