I originally thought of the Humor and Romance category but I find it harder to fill up so I just didn't include it... Anyways, here's my list on both categories;
Humor
(1) Hajime no Ippo (especially New Challenger)
(2) Slam Dunk
(3) Golden Boy
(4) Ouran High School Host Club
(5) Welcome to the NHK
Romance (such a bad list - I believe)
(1) Green Green (to think that an ecchi series is on top of my list)
(2) Saiunkoku Monogatari
(3) Fushigi Yuugi
(4) Ouran High School Host Club
(5) can't think of any ATM (maybe Detective Conan will do)

Here goes nothing, but I'll tell you nothing will make it to 5
Plot
1) Monster
2) Baccano
3) Death Note
Music
[Unlike everyone else, I'm looking at the actual score, not the OP/ED, which have NOTHING TO DO WITH THE ACTUAL SERIES[ok, rarely have something to do with the actual series]]
1) Beck [Best music anime EVER, they cover so many styles, and every song performed in the anime was made for the anime, its fantastic]
2) Cowboy Bebop
3) Baccano
4) The Big O
Character Development
1) Death Note
2) Baccano
3) Detective Conan
4) Initial D [this is less about development and more about growth]
5) Beck
[OMG I MADE IT TO 5!]
Thats it for me...

I'm surprised only one person has mentioned Gintama so far... Its a bit inane, even so much silly and random, yet it gives you a laugh everytime...
Now excuse me while I look for a t-t-t-t-t-t-t-time ma-mach-machine...

So was I. Otherwise, much as I love TWO-MIX, I wouldn't have picked Gundam Wing. Or TRC.
