I need help finding out how to convert 720p MKVs to 720p MP4s, but without lowering/reducing the audio/video quality at all.
I'm only asking this because my 160 GB PS3 refuses to recognize MKVs.
P.S.: Links to tutorials for the programs you recommend would be really helpful.

Let's see ~ it is possible
http://handbrake.fr/downloads.php
Download this
Selected the file you want as input and set the output to mp4.
The question is about not lowering the quality. Just test it
Maybe put the encoding to "MPEG4"

I'd suggest XviD4PSP. Despite its name, it's able to convert pretty much any file or audio format to any other, including basically any change one could want to do, including cutting, resizing etc.
Considering that the new
6.0 version is not yet feature complete, I suggest sticking with the
old version, 5.037.
I don't have a tutorial at hand, but there should be dozens out there. Also, you can ask me if you have questions.

I wonder if a softsub MKV can be converted to MP4 without losing the softsub. Is it possible?

Yes they can

Extract the subtitles and convert the video/audo.
Merge them back together and there you go.

It is, of course, possible to convert a soft-subbed MKV into a hard-subbed MP4. Alternatively, you can also keep the soft-sub in a different file and load it into your player (some players load them automatically if they have the same name). But a soft-subbed MP4 should be impossible.
